Made a frittata last night. I've never heard of these things before but there was a picture and a recipe in a magazine that looked delicious. It's loaded with egg, potato, spinach, onion and red pepper plus generous amounts of seasonings. Wellllllllllllllll.....I ended up with a skillet full of nutrition that I didn't like! Oh brother. It was shoved into the fridge to be reconsidered today. Now I have to tell you that it was delicious this morning with ketchup!!!!! There's got to be a recipe somewhere for one of these things that tastes good on its own.

You surprise me here because you strike me as someone who has a sophisticated experience with a variety of foods, particularly with restaurant dining. This frittata was basically a glorified omelet. My thought has been, that with a few changes in the ingredients, particularly the cheese and seasonings, it could be more to my liking. I have trouble with salad and veggies. After having it once or twice, I don't want it anymore. Then the ingredients go bad in the fridge. It is a terrible waste. You must not care for the frittata idea at all.

It's the reheated eggs that puts me off. It's iffy when it's a breakfast casserole or quiche, depending on how it's prepared, but I usually find an omelet or frittata too dry and spongy unless it's fresh.
