Hi meggie, I've put your mint brownie frosting on a chocolate cake. Plus, it's been sprinkled with pulverized candy cane bits and powder. After tasting it (and it's delicious) I am wishing I thought to mix the bits into the frosting. It's really nice!!!! Why didn't I think of doing this sooner?

Sounds good! I have the garden club executive here on Monday night and I was going to make the Texas sheet cake & mint frosting but may rummage through the cupboard to see if there are any leftover candy canes.

Please let me know what your technique might be for reducing the canes to bits and pieces. So far, I've been putting them in to a plastic bag and attacking them with a hammer. There's probably microscopic bits of the plastic ending up in this foray. ........... Sometimes for Christmas I've made sandwich cream cookies with Pecan Sandies and then rolled them in the candy cane bits. The bits stick to the cream filling around the outer edges.

Looks like the frosting needs to be a lighter for a cake than this one is but I've been wanting to try it for a long time. I often store a cake in the fridge. It keeps it fresher and maintains the moist tenderness longer but this frosting hardens up in the fridge. However this frosting makes my brownies!!! Further, they are scrumptious straight out of the freezer. As far as I am concerned, there are no brownies anywhere that are better than my mint frosted brownies.

I'll keep that in mind if I ever use it on a cake. When I made it this time, the frosting was cold before I had time to put it on the brownies, and was too firm to spread. I transferred it to a bowl and microwaved it at medium power for about 30 seconds and it was good to go. They got rave reviews at the meeting.
