There were some comments on a site about the excellent nutritional value of Kale and a recipe posted with that. As it has turned out, I now have a recipe that is delicious and also a very quick + easy meal. Now I am wondering if there are different ideas for kale, if you use it and what you do with it. What I did tonight was to cook it in chicken broth with olive oil, then added slivered almonds, walnuts, Mandarin oranges and a diced cooked Tyson breaded chicken fillet. So...What else can be done with kale that is different from this?

I'll have to try your recipe. I usually like cooked greens, and had the first swiss chard out my garden for dinner last night.
The only other time I've had kale was from a prepared kale salad that is sold at Costco. A friend brought it to a potluck and it was very nice.

It's a mild, large leafed green that grows easily. You can use the small, young ones in salads or steam the larger leaves, like spinach. I've been growing it in my garden for the past few years after I put in a new garden area one summer and was looking at the garden centre for some veggies to fill the spaces. It's colourful in the garden as the stems can be bright red like a beet leaf or green or gold.
