This evening I made chili. It's been years since I've made chilli. This is because I used to use the store's generic chilli powder but they switched brands and then I didn't like it as much anymore. So.....This is the first time in a long time but it is missing something, a flavor, and I don't know what it could be. It isn't salt and it isn't the chili powder, at least I don't think it is the chili powder. Something is missing, and it is something other than the HOT spice. What else enhances a good chilli flavor?

Maybe some cumin? Maybe some cayan? Possibly a little jalepano juice? If you only use a little of the hot seasonings, you can get the flavor without "burning" the chili.
I cheat. I use the box of chili seasonings, BIG bag of seasonings premixed.

I don't like really spicy things, so I use French's ChiliO packaged seasoning.

I know some people add green peppers and onion but I usually just do ground beef or turkey, beans, tomato paste, salt and chili powder- rarely I'll add a little garlic

I use turkey, dark red kidney beans, black beans, tomato sauce, chopped onion, frozen corn (just a handful), and one of the chili seasoning mixes. I only use about half a package because I don't like it too salty or spicy. Let it all simmer and throw a little shredded cheddar or jack cheese on top. Great with cornbread!

It never occurred to me to look for a chili mix. And ditto on being conservative with the HOT stuff! I'll check out the mixes, especially those mentioned here.
RE mixes: I seldom use them straight but view them as a starting point. My spaghetti sauce starts with a jar of Traditional Prego but you'd never know that by the time I'm done. It's good too.

YESSSSSSSSSS!!! I would love to know what your recipe is. I love marinara anything.
Start a spaghetti thread in the menu forum. We can all have fun with that.
My spaghetti is not traditional but it is nutritious and it's good!

Well now I need to thank you all. Was out today and bought some different packets of chili mix, then came home to try one. The chili was already made but I added a little bit of a mix to a single serving and it was great! I had chili and salad for supper. More, but not all, of that mix was added to the rest of the chili and it is all now in the freezer as single servings. So now, chili is back in my life again. Thank you very much!!!!
