For your wonderfully delicious brownie frosting recipe. I made the mint frosted brownies for our chorus refreshment this evening and they were a hit. Someone has asked for the recipe. One thing I realized when noting the recipe. I've been making it the wrong way the whole time but it's been wonderful. The recipe says to remove it from the heat before mixing in the sugar. I have always kept it on the heat the whole entire time. This must change the texture. I have to pour it on the brownies and best be sure they are all covered before the frosting starts to cool. This would be immediately.
Thanks to your frosting, I like my mint frosted brownies better than any other I've ever tasted.

It's a great recipe that my Mum got out of the newspaper ages ago. Feel free to pass it on.
I think I'll try leaving it on the heat for a bit because there are times when the sugar doesn't mix in completely smoothly. If you make it as the recipe says, it's not a stiff frosting but you have lots of time to put it on. The Texas Sheet cake brownie recipe with the frosting is my go-to recipe if I need to take a chocolate square. It makes a jelly roll pan & freezes forever.

Yes. A Christmas brownie pulled from the freezer in February is especially delicious.
I use a 9" square pan. The frosting is more than enough for that. What I've learned though is that any extra frosting does something wonderful for my hot fudge sauce which is my favorite on peppermint ice cream.
There are times when it doesn't mix smoothly for me either but I don't sift the sugar and blamed it on that. I've put it through a small strainer over the heated pan but am wondering if the stick blender or electric hand mixer would do the trick.

I never sift it, and just accept the little lumps. They often dissolve on their own but if they are really bad, I sprinkle some coconut or crushed candy canes on top to hide the sins. Christmas brownies in February? Heck, I've pulled some out the next Christmas that got 'lost' in the freezer and they were fine.
