We're having our kitchen re-done, so I'm cooking out of a temporary kitchen in the dining room. While it has exceeded expectations, I'm having to convert how I cook without a stove or oven. I bought an electric skillet and I really like it. I made some mean hash browns in it! My mom and grandmother used electric skillets, but I haven't used one in a long time. Do any of you use one and what do you like to cook in it? I've googled electric skillet recipes and gotten some good ideas. Last week I bought a pre-made pack at the farm stand of sliced sirloin, onions and peppers. I stir-fried them in the skillet then added a can of petite diced tomatoes and a little soy sauce, simmered for awhile, and put it over rice. It was one of the most delicious meals I've made in awhile! So I might as well put this kitchen construction to good use and learn a few new tricks. Do any of you have a good electric skillet recipe to share? I'm having fun trying new things, my repertoire has gotten stuck in a culinary rut.

This is something I've done in a regular skillet but it should work in the electric.
Using Good Seasons Italian salad dressing (which I make with part olive oil and part canola):
First soften pieces of onion, green pepper and minced garlic clove. Then add sliced carrot til partly cooked. Then add (all together) pieces of summer squash, zucchini, thick sliced tomato, fresh baby spinach, broccoli and some garlic salt. Cover with a lid to steam.
Use Parmesan cheese to taste.
You could probably include chunks of fresh chicken tenders, cooking them partially at first.
I have another version of this, all wrapped up in foil and baked in the counter top convection oven. It's yummy!!!
I really like the Good Seasons Italian dressing and keep a bottle of 3 rounds of it all made in my fridge. It adds great flavor to lots of things.
